3 large potatoes

1 cup gram flour

1/2 teaspoon red chili powder

1/2 teaspoon turmeric powder

1/2 teaspoon cumin

1/2 teaspoon celery

salt to taste

A pinch of baking soda

water, as required

Oil, for deep frying

For serving:

green chutney

Tamarind Chutney

Chopped onion

fStep 1: Preparing Potatoes for Pakodas

First of all, peel the potatoes and wash them thoroughly.

Now, using a sharp knife or a mandolin, slice the potatoes thinly. You can cut the thickness of the potatoes as per your choice, but medium thickness works well for pakodas.

It depends on you, what kind of thickness you want to keep.

Step 2: Preparing Pakoda Batter:-

In a mixing bowl, mix gram flour, red chilli powder, turmeric powder, cumin, celery and a pinch of salt. You can use spices as per your taste.

If a person likes spicy more, then use chilli as per your convenience.

Gradually add water to the dry ingredients and whisk to form a smooth batter. Make sure the batter is thick enough to coat the back of a spoon. If it is too thin,

So your pakodas may get wet, hence take special care that your pakodas do not get wet and use water in pakodas wisely.

Step 3: Seasoning the Potato Slices

Heat some oil in a deep frying pan or wok over medium-high heat.

While the oil is heating, sprinkle some salt on the potato pieces. Pakodas become crispy on medium-high flame.

It not only adds flavor but also helps in removing excess moisture from the potatoes.

Leave the salted potato slices for a few minutes and you will notice that they will start releasing moisture.

Pat them dry with a paper towel.

Step 4: Coating the Potato Slices

Once the oil is hot, it is time to coat the potato slices with the gram flour batter.

Dip each potato piece into the batter, making sure it is evenly coated. Take special care that the potato pieces are completely coated with the batter.

You can use a fork or tongs for this step to avoid getting your hands dirty.

Carefully drop the coated potato pieces into the hot oil. Repeat this process with a few more slices,

But make sure there is not too much in the pan. Frying in batches cooks food evenly.

Step 5: Fry the pakoras in the pan:-

Fry the pakodas on medium-high flame, turning them occasionally so that they cook evenly.

The pakodas will start turning golden brown and crunchy.

This should take about 4-5 minutes per batch.

If you want more crunchy pakodas, you can add a pinch of baking soda to the batter.

This helps create a light texture. Pakodas become crispy by adding soda.

Be careful that the amount of soda is not too much!

Step 6: Drain and Serve

When the pakodas are golden brown and crisp, use a slotted spoon to remove them from the hot oil.

Place them on a plate lined with paper towel to remove excess oil.

Sprinkle some chaat masala over the hot pakodas to enhance the taste (optional).

Step 7: Serving and enjoying the pakodas:-

Hot and crunchy potato pakodas are best enjoyed with green chutney and tamarind chutney.

You can also serve them with chopped onions for extra crunch and spicy taste.
