Aloo Paratha is one of the most loved dishes in all Indian cuisines, whose taste and preparation method is absolutely unique and easy. Ingredients of Potato Parathas:-
For dough:
2 cups wheat flour
water to knead the dough
A pinch of salt
For the Masala Filling in Potato Parathas:
4 medium sized potatoes, boiled and mashed
1 small onion, finely chopped
2-3 green chilies, finely chopped (change according to taste)
1/2 tsp cumin
1/2 tsp red chili powder
1/2 tsp turmeric powder
1/2 tsp garam masala
salt as per taste
fresh coriander leaves, finely chopped
ghee or oil for cooking
Step 1: First prepare the dough
firstly, in a mixing bowl add wheat flour. Add a little salt to taste. Knead the dough by adding water gradually to make a soft, shield. The dough should be smooth, not too sticky. Cover it with a damp cloth and let it sit comfortably for 20-30 minutes. Till then do other things!
Step 2: Prepare the Potato Filling
While the dough rests comfortably, let us prepare the potato filling. Boil potatoes in a bowl, add mashed potatoes, finely chopped onions, green chilies, cumin seeds, red chili powder, turmeric powder, garam masala, salt, and fresh coriander leaves. Mix all the spices well in the potatoes so that they all mix well in the potatoes. Check the taste and adjust the spices if necessary.
Step 3: Prepare the Dough Filling
When the dough sets, divide it into balls of equal size, make balls of the dough as per your convenience and make them into soft balls. Similarly, make potato balls of the prepared proportion by filling the potatoes.

Step 4: Now you start rolling the paratha: -
Take a potato ball and press it slightly with your fingers. With the help of a rolling pin and dry flour, roll it into a small curve (chakla) (size of four to five inches). Place a portion of potato filling in the center.
Step 5: Seal the parathas and press with the help of fingers.
Join the edges of the dough curves and completely close them with the potatoes. Dust off any excess flour to make sure there is no mess. Now, gently press the potato filled ball.
Step 6: Now roll the potato parathas:-
Dust the filled ball with dry flour and carefully roll it into a large curve (chakla) (about 7-8 inches in size). Ensure the texture of Aloo Paratha without peeling and of uniform thickness!
Step 7: Cook Aloo Paratha
Heat a tawa or non-stick pan on medium high heat. Place the rolled potato parantha on a hot griddle. Cook for a minute or two, when you see small bubbles forming on the surface of the parantha.
Now, flip the prantha and apply some ghee or oil on the cooked side. Flip again and apply ghee or oil on the other side as well. Cook till both the sides are golden in colour and crisp. It is very important that the parathas look golden, otherwise you will not get the taste that you want!
Step 8: Serve potato parathas hot
