Step 1: Marinating the Chicken
First of all, wash the boneless chicken pieces thoroughly and wipe them with paper towels.
In a large mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, garam masala, cumin powder, coriander powder, salt, and vegetable oil.
Put the chicken pieces in the marinade and coat them well.
Cover the bowl and let the chicken marinate for at least 2 hours, or you can even marinate it in the cold or your best, overnight in the fridge.
The overnight marinating enhances the flavor of the chicken and makes the chicken tender.

Once cooked, skewer the chicken and keep it aside.

Heat 2 tbsp butter in a pan on medium heat.
Add finely chopped onions and fry them till they turn brown.
Add ginger-garlic paste and cook for another 2 minutes till the aroma goes away.
Add tomato puree and cook till the mixture thickens and oil separates.
Add chili powder, garam masala, and dry fenugreek leaves (kasuri methi) to the pan for sprinkling. Mix well.
Add the cashew nut paste and cook for a while, stirring continuously, and cook for a while.
Add the heavy cream slowly and stir till the gravy reaches the desired depth. You can adjust the thickness by adding cream or a little water.
Add the tandoori chicken to the gravy and cook it for 5-7 minutes, so that the colors get combined.
Stir in remaining 2 tablespoons butter so it melts into rich, creamy sauce.
Add salt as per taste.
