Ingredients for making pakoras:-
For Pakora:-
2-3 large potatoes
1 packet bread
1 cup gram flour
2-3 tbsp rice flour
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon celery
salt to taste
water for batter
oil for deep frying
Spice
For spice mixture:-
1 teaspoon chaat masala
1/2 tsp roasted cumin powder
1/2 tsp garam masala
a pinch of asafoetida
Instructions for making pakoras:-
Prepare potatoes for pakodas:-
Peel and wash the potatoes. Boil potatoes in a pot! Grate or mash the potatoes
Make it like chokha, add 1 green chilli, coriander leaves, teaspoon cumin, coriander powder, mango powder, a pinch of garam masala, salt and mix well.
Taste the spices a little and compensate for whatever is missing.
Prepare batter for pakoda:-
Mix gram flour, rice flour, red chilli powder, turmeric powder, carom seeds and salt in a mixing bowl. Mix well.
Be careful that the batter is not too wet! Use water slowly in the batter
Gradually add water to the dry ingredients while whisking to form a smooth batter. The consistency of the batter should be similar to pancake batter. Keep it aside for 10-15 minutes to rest.

Cut each bread into triangles, fill the prepared potato masala in the middle of the bread, dip the piece in the prepared batter, ensure that it is well coated,
Heat oil in a pan:-
Pour enough oil into a deep frying pan or kadhai and heat it over medium-high heat. To check if the oil is hot enough, drop a small amount of the solution into the oil; If it starts crackling and rises to the surface, the oil is ready for frying.
Fry till golden brown:-
Fry the batter coated bread pieces until golden brown and crisp. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towel to drain excess oil.

Sprinkle the prepared masala mixture over the hot potato pakodas. To enhance the taste, you can also serve them with green chutney or tamarind chutney.
